Happy Easter and FREE Peanut Butter!

Happy Easter, everyone! What are you all doing for Easter? Peter and I are taking it easy (well, I’m doing homework, but at least that’s easy 😛 ). We made some Waffles of Insane Greatness this morning with King Arthur white whole wheat flour.

Pouring the batter:

Smothered with Chillin’ Chocolate and Adirondack Jack from Saratoga Peanut Butter Company, topped with sliced banana and a dab of Crofter’s raspberry jam.

Who would have ever guessed that this waffle was made with whole wheat flour? The waffle was light and fluffy, with a wonderful buttery taste (no butter in it). The secret to this recipe is the cornstarch – if you look at the recipe, you’ll notice that it has 1/4 of cornstarch in it. Insane! But, ESSENTIAL to making a fluffy waffle with crisp edges.

Everywhere I look I see celebrations of Easter! My Aerogarden marigolds decided to show themselves 🙂

And my favorite peanut butter is hanging out in the sun:

If you’ve been reading this blog for a while, you know that I have often waxed poetic about how much I love Saratoga Peanut Butter Company. Their peanut butter is smooth and rich, and the PB’s only ingredients are peanuts and salt – perfect! I’ve never eaten a smoother peanut butter. My food processor only wishes it could make PB that good.

So! In honor of Easter and of my 66th post (did you know that 6 is the first perfect number?), one lucky THIH reader will win TWO jars of Saratoga Peanut Butter Company peanut butter! The winner will get to choose between one of the following two options: (1) TWO jars of Plain Jane Creamy peanut butter, or (2) ONE jar of Plain Jane Creamy peanut butter and ONE jar of Plain Jane Chunky peanut butter. I would offer two jars of Chunky as a choice, but I only have one jar 😛

Those waffles look scrumptious 🙂 I had a great Easter dinner yesterday with some Romanian friends who cooked lots of strudel 🙂 Spinach + cheese + flaky pastry and then apple strudel for dessert…quite decadent.   8. I can’t eat peanut butter so I am not entering this delicious contest!! But I think your waffles look amazing. I have never put cornstarch in my pancakes (I make them for my family not me) but that might be the key ingredient for maximum fluffiness. I am going to give it a try!
