How to Get Veggies at (Almost) Every Meal

How, you ask? By following my ONE LITTLE TRICK to guarantee VEGGIES at almost EVERY MEAL. (Yes, my sweeping statement is supposed to sound like those super-lame “lose weight quick” ads.)

Step right up and follow my 3 EASY STEPS!!!! to get your vitamins and phytonutrients!

(1) Take small portion of favorite food (e.g. lasagna, meatloaf, creamy sauce).
(2) Place heaping pile of choice green in large bowl (e.g. lettuce, spinach, kale).
(3) Place favvie food neatly on bed of green.

Result?

The most delicious way to pack in fiberful, nutrient-rich veggies I can think of. Add any other veggies on hand, like bell pepper or broccoli, and you’re an A++++!!! eater (as they say on Ebay).

After Medical Nutrition Therapy, Food Service, and Counseling & Teaching, I rolled on down the state to work for my awesome dietitian. We mostly worked on menus and with her food service program, NutriKids. Let me tell you, those kids are getting some tasty food.

When I arrived at home, Peter was in full-fledged chef mode, stirring up a turkey Sloppy Joe that looked savory in the pan and even tastier on the plate.

I can’t give you the recipe since it’s out of this cookbook, but I *can* tell you that it contained ground turkey, onion, garlic, molasses, cumin, and Worcestershire sauce. 😉

Check out these awesome kitchen clogs. Professional chefs wear similar clogs in restaurant kitchens. I’m trying to get Peter to put on his whole outfit (chef coat, chef pants, kitchen clogs, and a large cleaver).

  1. My problem is I love veggies so much that they dominate the meal, and I end up all bulked up with fiber that leaves me burping and occasionally, gassing. lol.

  2. turkey sloppy joesssss! yummy!! and love your steps for getting veggies in!! that’s what i love to do when I go to WF and get their hot bar! load up the bottom with spinach, lettuce, shredded carrots, bell pepz, broc, cauliflower……..and top with all the goodies!! 😀

  4. I think two entries on fried chicken might even be more awesome. You can even put said fried chicken on a bed of lettuce if you prefer.
