Monday Munchies, Part 25: An Old Favorite

This post is a continuation of the Monday Munchies series where I show everything I eat over the course of single day. These eats took place last Friday, when my pictures gradually moved from not-too-bad to terrible.

Breakfast, 8 am:

Bircher muesli topped with 1/2 yellow peach, champagne mango, chia seeds and homemade rhubarb pudding. Served with some kind of hot tea with milk.

Let’s take a closer look at that rhubarb pudding.

If you like tart flavors, simmer a 2:1 ratio of rhubarb slices and strawberries over low heat for about 10 minutes. Spoon over ice cream or yogurt. Pause to tell me how awesome I am.

Lunch, 12:30 pm:

Back when I was a dietetic intern, I often brought sandwiches like this roast beef + lettuce extravaganza for lunch. The other students would try to guess how much lettuce I could cram into my sandwich. I think this one wins out.

In addition to lettuce, this sandwich DOES contain roast beef, mayo, basil and a little horseradish. Good luck trying to find them, though.

Snack, 4 pm:

Remember this, dear reader? It’s been a long time since I tasted Saratoga Peanut Butter; for some reason, the local Illinois grocery stores don’t stock peanut butter made by a NY-based company.

Enter my pals Arden and Dan, who showed up on our doorstep with the two jars pictured above. They’ve discovered my secret: that the way to a Happy Jessie‘s heart is with creamy peanut butter.  Within three days, the jar of Adirondack Jack was half gone.  I’m trying not to think about the inevitable empty jar.

Dinner, 7 pm:

And here’s where the picture quality takes a free-fall. Peter and I went out with our neighbor friends to Destihl, a local restaurant and brewery. I enjoyed some warm pretzel and potato croquette, but apparently forgot to take pictures of those. As the phone picture of my main dish suggests, perhaps that was for the better.

That would be a duck confit cassoulet. It tasted much better than it looks. Trust me.

After dinner we wandered through downtown Champaign, where the entire population of Champaign-Urbana was enjoying supper.

At home I had a bite of Peter’s homemade chocolate peanut butter bar (to be featured in a future post). This is not the exact bite I ate; I took a picture the next morning because I couldn’t bear to take another crappy dark picture.

  2. I love creamy peanut butter! I am quite looking forward to that post that features Peter’s peanut butter choc bar more extensively!

    That sandwich is so funny! I couldn’t take a bite out of it, half the lettuce would fall apart 😀 I am the type who eats burgers (the English-pub type, not the McDonald’s type) with a knife and fork, so yeah, no tall sandwiches for me!

    1. I prefer a knife and fork, too! You’re absolutely right – chowing down on tall sandwiches with utensils is pretty much impossible 🙂

  3. Wowza, I’ve never seen so much lettuce in a sandwich! I love panini sandwiches the most, whether tall or short 🙂 And anything with smoked salmon and/or brie.

    That peanut butter chocolate butter looks amazing! I really really wish I could eat one right now 🙂
