Happy Easter, everyone! What are you all doing for Easter? Peter and I are taking it easy (well, I’m doing homework, but at least that’s easy :P ). We made some Waffles of Insane Greatness this morning with King Arthur white whole wheat flour.

Pouring the batter:

Smothered with Chillin’ Chocolate and Adirondack Jack from Saratoga Peanut Butter Company, topped with sliced banana and a dab of Crofter’s raspberry jam.

Who would have ever guessed that this waffle was made with whole wheat flour? The waffle was light and fluffy, with a wonderful buttery taste (no butter in it). The secret to this recipe is the cornstarch – if you look at the recipe, you’ll notice that it has 1/4 of cornstarch in it. Insane! But, ESSENTIAL to making a fluffy waffle with crisp edges.
Everywhere I look I see celebrations of Easter! My Aerogarden marigolds decided to show themselves :)

And my favorite peanut butter is hanging out in the sun:

If you’ve been reading this blog for a while, you know that I have often waxed poetic about how much I love Saratoga Peanut Butter Company. Their peanut butter is smooth and rich, and the PB’s only ingredients are peanuts and salt – perfect! I’ve never eaten a smoother peanut butter. My food processor only wishes it could make PB that good.
So! In honor of Easter and of my 66th post (did you know that 6 is the first perfect number?), one lucky THIH reader will win TWO jars of Saratoga Peanut Butter Company peanut butter! The winner will get to choose between one of the following two options: (1) TWO jars of Plain Jane Creamy peanut butter, or (2) ONE jar of Plain Jane Creamy peanut butter and ONE jar of Plain Jane Chunky peanut butter. I would offer two jars of Chunky as a choice, but I only have one jar :P
There are several ways to enter, most of which involve some kind of shameless self-promotion on my part.
(1) Come up with a caption for the picture below. Not required, but I will gather all the captions I get and post them in my next entry like I did in the last caption contest.

Sample: “What? You say there’s a what behind me?”
(2) Tweet about the giveaway. You can copy and paste this: I want FREE Saratoga Peanut Butter from thehappinessinhealth.com! @JessieHealth
(3) Mention the giveaway on your blog and link back to this post.
(4) Add THIH to your blogroll.
(5) Almost forgot! Add THIH your reader for another entry.
Leave a comment for each entry so that I can enter you in the contest! The winner will be chosen this Friday. Good luck! :D

Before I go, I want to wish my wonderful friend Marie a very happy birthday today! Happy Birthday, Marie! :D
I also want to wish my dear friend Amy a very happy birthday this upcoming Tuesday! I know it’s early, but due to a huge project coming up in school (we’re catering a huge meal!), I won’t be able to post again until Wednesday at the earliest. Here we are in high school:

This wonderful gal has seen me at my my best AND my worst. Love ya, Amy! :D

Have a very Happy Easter, everyone! :)

Happy Saturday, everyone! Sorry for being MIA yesterday – Peter and I made an impromptu trip into NYC. Yesterday at about 8:30 am, Peter and I looked at each other and said “Let’s go today!”, and by 9 am we were out the door.
We knew this was going to be a short trip because of the dogs, so we stuck to the essentials: the Metropolitan Museum of Art and food! Since there are a lot of pictures in this post, I’m going to keep the text to a minimum.
On the way down, we passed by Waveny House in New Canaan, which happens to be where Peter and I were married nearly two years ago! We couldn’t resist stopping in to take a look (and to use their bathroom). Here are a couple of pictures I took yesterday vs. their 2-year-old equivalents:

And, because I know you’ll ask:

Waveny House is so gorgeous. I loved having a chance to look around again.

Let’s move on to the NYC fun! Exploring the Met:
Extremely poor aim:

I want all of these violins for myself!

We also stopped by Kalustyan’s, the amateur chef’s spice playground:

Peter was like a kid in a candy store:

We walked out with far more than anyone should be carrying around NYC.
Dinner was at Babbo, owned by chef Mario Batali (I’m sure you’ve heard of him). Our friend Eric at Forbidden City has been trying to get us to go there for ages. Finally! I did look around for Mario while we were eating at Babbo, but alas!

I enjoyed a wonderful glass of Rosato Bastionich 2008 with dinner. The wine had a light, crisp grapefruit flavor:

Sardines with caramelized fennel and other deliciousness:

The BEST pumpkin ravioli I’ve ever had, with sage:

Peter’s wild boar ragu (also excellent):

And, of course, chocolate pistachio semifreddo with pistachio cream:

The “modified Egyptian”, as Peter calls it:

The wine was pretty good with dinner, but I don’t feel like it was a good pairing. Meghan, what would you suggest having with ravioli? (Happy Birthday, by the way!!)
I definitely overindulged a little, but you know what? It’s A-ok! Overindulging is a fine “sometimes” thing, and I very rarely overindulge nowadays. Normal eating is eating too much sometimes and feeling like you wish you had eaten less, and eating too little sometimes and wishing you had eating more (I read that somewhere, but I don’t remember where). Anyway, my wine-induced dehydration this morning was enough to help me remember that overindulging is a “sometimes” thing.
I think this post is long enough, so let’s wrap up with a fun look at the captions from last post! Here they are:

“I think Maddie’s thinking about sneakily slipping out that door as you open it!” Darryn @ brio.gusto
“Please don’t step on me again!” Tina @ A Tina Bit of Faith, Fitness, and Fun
“Stop before you embarrass both of us!” Christina @ Dinner at Christina’s
“Cute tushie!” Nicole @ PreventionRD
“This is my new dance, the running man.” Naomi @ One Fit Foodie
“I’ve taught her to walk well.” Lucy at Sweet Spirit Shine
“Please, I do it way better!” Emma @ Midget Keeper Daily
“Please, you can’t fool me. I know we’re not really outside walking.” LeQuan @ Luv to Eat
Thanks for participating, everyone – we have some real comedians and geniuses out there! :) I’m thinking that I’m going to have a caption contest with REAL PRIZES sometime in the next few weeks … so stay tuned! ;)
Whew! This was long! Until tomorrow … have a wonderful evening!
Q: Have you ever been to NYC? What is your favorite activity to do there?
