|

Happy Friday, everyone! I’m sorry for being MIA during the past week. I’ll give you look at what I did during the past week in tomorrow’s post. In the meantime, however, I’m sure you guys are all itching to know who won the FREE Saratoga Peanut Butter!!

The winner …

Danielle @ Coffee Run! (I love your name because it’s my middle name! 😀 ) Danielle, shoot me an email (thehappinessinhealth [AT] gmail [DOT] com) with your address and whether you want two smooth PBs or one chunky and one smooth, and I’ll get those out to you ASAP!).

Thanks to everyone for participating! You guys sent in some fabulous captions. And, I though it was pretty funny that the first thing many of you thought of was tooting 😉

Before I leave you for the day, here’s a little recipe using not one, but TWO Saratoga Peanut Butters. Let us call it:

Banana-Sweet Saratoga Peanut Butter Balls

Ingredients:
1/2 cup oatmeal
1/3 cup brown rice flour
1/3 cup Saratoga Peanut Butter, any kind (I used a combination of Plain Jane Creamy and Adirondack Jack)
1 very ripe banana, mashed
2 tbsp chocolate or carob chips
1 tbsp water or milk

Preheat oven to 350 degrees F. Mix the ingredients together in any order that you wish.

Once thoroughly mixed, roll batter into balls and place on greased or Silpatted baking sheet. Bake for 7 minutes, or until chocolate oozes in an attractive manner.

Place your PB balls in a well-lit area and admire your handiwork.

And that’s it! 🙂

Edited to add: This recipe can work with any kind of nut butter, especially if you have an allergy.

If you’re wondering, “what the heck did this girl do last week instead of blog??”, you’ll find out tomorrow. Until then, aloha!

Q: The weekend cometh! What will you be doing?

  1. Mmmmmm, those PB balls look wonderful!! I want those right now!! Too bad I don’t have any chocolate chips. Will have to make those sometime b/c they’re gluten free!! 🙂

    1. Thanks Em!! I totally forgot to mention in the post that I was going to steal your idea and have Maddie choose the winner in a video, but Maddie is not as calm as Ripsey and so it was hard to pin her down 🙂 Oh well, maybe I’ll have our other pup Bonnie choose the winner next time 🙂

  2. Those PB balls look superbbb! Can’t wait to hear about your week – hope it was a “good” MIA instance, and not an unfortunate occurrence!

    1. Nothing bad, I promise, just normal busyness! Thanks for your concern, though, Jessica!

  3. Those PB balls look so amazing…and those captions cracked me up!

  4. Jessie, may I put this on the Saratoga Peanut Butter facebook+website?? Thank you so much!! 🙂

  6. Haha! Totally enjoyed reading those captions! What a great idea Jessie! Oh how I would love to have one of those peanut butter balls, dang peanut allergy. Can’t wait to hear what you’ve been up to.

    1. I should have mentioned that these PB balls could be made with any sort of nut butter. I’ll do that now, thanks for the reminder LeQuan!

      1. LUV IT! But I really should have thought of that myself…doh (say it like Homer ;-)) Thanks for the recipe, my kids will love these (if mommy doesn’t eat them all before the cooling process).

  7. I’m excited to hear about your blog-free week! Missed you chica!

    Congrats to Danielle.

Those banana PB balls are making my morning. Seriously. As are the caption contest quotes. Too funny. There are some creative bloggers out there…

  8. Yummy, I never get tired of nut butter! My weekend’s all about relaxation, soaking up some sunshine, and hopefully playing some tennis 🙂

  9. haha, I love reading all the captions!! And those PB balls look sooo good!

  10. I love all the captions! You have some creative readers for sure.

Toastmasters went well yesterday…I was a bit calmer and was better prepared. But I didn’t a chance to really speak because there were 20 people yesterday. Thank you for asking Jessie! So nice of you to remember.

The PB balls look delicious. Enjoy your Saturday!

  11. this recipe looks soooo delicious i never tried to do cookies before!

  12. Bananas AND Peanut Butter AND chocolate. Yum. Some of our favorite things. Any recommendations for where to find rice flour tho? Would it be at a health foods store?

    1. Great question! I’ve seen rice flour at specialty health food stores and (much cheaper) at a larger grocery store like Whole Foods. Some of the “regular” grocery stores may carry it, too, like Stop & Shop. You can also buy it online – at Amazon.com, for example. I won’t put the link here in case the link causes this to end up in your spam folder, but if you go to Amazon.com and search for “rice flour”, you’ll get a lot of results.

      Thanks for stopping by! 🙂
