Wasabi-Ginger Salmon Burgers

I found this mug at the back of a cabinet yesterday. I received it as a gift when I briefly worked at the Peabody Museum of Natural History in New Haven, CT. It seems like we were there a lifetime ago; although, I’ll never forget those stubby T-rex arms. This museum has the most incredible mural of more than 300 million years of evolutionary history. If you’ve ever seen this mural, you’ll know how incredible it is in person – it seems to go on forever.

Ahoy, nautical recipe!

If you’ve never had a salmon burger, this recipe will be a treat.  Ginger and wasabi add a tasty twist to this salmon burger that makes it a perfect addition to a July 4th BBQ. (If you’re looking for a vegetarian alternative, try these stick-to-your-ribs bean ‘n’ veggie burgers; if you’re looking for a plain-but-still-tasty salmon burger, cook up these salmon burgers on a budget – I did a cost breakdown on the latter recipe.)

Notice how I zoomed in so far, you can’t see how my burger is smaller than the bun. Of course, it now occurs to me that the following picture with the fancy-schmancy writing reveals all:

I often find my burgers are smaller than the buns, unless I’ve made the burgers very flat (and really, who wants a flat burger?). Peter’s burgers are closer to bun size, and that makes sense – we don’t need the same amounts of food.

My extra bread? It goes to the birds.

On this day, I sauteed homegrown kale with olive oil and garlic to serve alongside our salmon burgers. From start to finish, dinner took about ten minutes. Take that, 30-minute delivery pizza.

Ginger-Wasabi Salmon Burgers

  Prep Time: 5 minutes

  Cook Time: 5 minutes

Ingredients (4 burgers)

  • 2 6-8 oz. cans salmon or 1 lb cooked salmon, flaked
  • 1/4 cup whole grain bread crumbs
  • 1 egg
  • 1/2 teaspoon garlic powder or 2 cloves garlic, minced
  • 1 teaspoon ginger powder or 2 teaspoons ginger, minced
  • 1 tablespoon canola oil
  • 4 whole grain hamburger buns
  • 1/2 cup plain yogurt
  • 1 teaspoon wasabi paste
  • Pinch salt

Instructions

Mix together salmon, bread crumbs and egg. Add garlic and ginger. Form into four patties. Prepare grill or medium-sized pan over medium heat. Use 1 tablespoon oil to grill or pan-fry for 2 minutes per side, or until cooked through. Toast hamburger buns, if desired. Place burgers on bun halves.

Combine yogurt, wasabi and salt. Serve sauce with burgers.

    No plans for the 4th this year, but I’m looking forward to just hanging out and relaxing…
