Weekend Roundup: Menu Planning in Space

Last night, after Peter and I returned from dinner at the house of one of his colleagues, I asked him to take a picture of me. I wanted to show off my snazzy tweed skirt with every color of blue and purple woven throughout. However, I did not communicate this wish to Peter, so I shouldn’t have been surprised to find this waiting on my camera:

Shall we fill in the details?

Everything in this picture is entirely true. I decided to wear my rocket shoes to dinner in case I needed to make a quick getaway. The pointy creature on the left is Tadeline, my one-armed T-rex friend. He was named in the tradition of Badeline, the bear version of Madeline. Have I lost you yet?

The bowl on the right, which I keep with me always and always, is filled with a never ending supply of Prairie Fruits goat cheese. You can never be too careful with goat cheese. Finally, I am, of course, in space. Too bad Peter cropped all these things out of the original picture. They would have been great to see in real life.

Let’s review last week’s menu plan!

Day 1: Curry chicken/tofu salad with fresh-baked bread (pushed from last week)
Day 2: Leftover Mapo Doufu. Because we have a LOT. Peter doesn’t cook wimpy portions, y’all.
Day 3: Savory Ingredient Week dish
Day 4: Halloween gourd soup and frittata
Day 5: Leftovers or FFA (free for all)
Day 6: Dinner at one of Peter’s colleague’s house
Day 7: Ravioli or Golden Harbor

How’d we do?

Day 1: Curry chicken/tofu salad with fresh-baked bread (pushed from last week)

Done!  Don’t ask me why the only picture I took is this awkward funky shot from above. I must have been stuck in space.

Day 2: Leftover Mapo Doufu.

We actually didn’t have leftover mapo because I packed the rest for Peter’s weekly lunches. We ended up eating omelets instead.

Served with half a toasted whole grain bagel and bell peppers.

Day 3: Savory Ingredient Week Dish

Done and done! To be shared later this week 😉

Day 4: Halloween gourd soup and frittata

We got a coupon in the mail to try Monical’s Pizza, which we have passed many times but never ventured to partake. So, we decided to try it this once – and we never will again. No flavor, plastic-y cheese … wow. :/

Day 5: Leftovers or FFA (free for all)

Didn’t do this, either. Peter’s department at the University of Illinois often goes out for happy hour on Friday afternoons, and this time it was held at one of his colleague’s houses. He made the most fantastic vegan chili ever (pictures tomorrow). MUCH better than leftovers!

Day 6: Dinner at one of Peter’s colleague’s house

Yup. See above.

Day 7: Ravioli or Golden Harbor

We’re doing this.

The score this week? 4 out of 7. Not too bad. We don’t have any crazy leftovers, and we got to spend time with some really cool people! I’m happy with that.

Day 1: Chicken tenders with veggie dippers
Day 2: Special awesomeness, because it’s a special day! (and I don’t mean because of the election 😉 )
Day 3: Roasted chicken with carrots and cauliflower
Day 4: Leftovers or FFA (free for all)
Day 5: Peter’s parents visiting
Day 6: Peter’s parents visiting
Day 7: Shrimp soup

    You’ve done great with meal planning. Some weeks I am so on it and others, not so much!
    The curry chicken and tofu salad looks fantastic!!!
