Monday Munchies, Part 22: The Anniversary Edition
Why did I randomly post a picture of roses at the end of my last post? Red-hued decorations for Casa THIH? Kinship with the family Rosaceae?
How about none of the above?
Last Friday, Peter gave me roses to celebrate our wedding anniversary. What could I do but show them off?
I think the past five years (and beyond) may be summed up in this one picture:
Not much has changed in five years, I’ll tell you that.
On to today’s post! This post is a continuation of the Monday Munchies series where I show everything I eat over the course of single day (last Friday). Behold: the anniversary edition.
Breakfast, 6:45 am:
Bircher muesli made with Noosa yogurt, almond milk, tiny sliced banana, frozen blueberries, chia seeds. Served with coffee and foamed milk.
Lunch, 1 pm (!; that’s what happens when you don’t plan, Jessie):
Eye-poppingly large salad with black beans, mushrooms, mozzarella cheese and dressing.
Peter and I decided to split a mango for lunch dessert and ended up taking one bite each before sending that impossibly overripe AND under ripe fruit to the depths of Hades (i.e. the kitchen trash).
Snack, 4:30 pm:
Gruyere and dried apricots. Because one can never have enough apricots.
Dinner, 7 pm:
Apple-glazed Cornish hens with sauteed baby kale and red quinoa with mushrooms. Skim milk, of course. The apple-glazed hens were pretty good, but we agreed the pomegranate-glazed hens are better.
Dessert? But of course, my dear reader! We each enjoyed a slice of our wedding cake.
“Five-year-old cake!” you cry. “That must be some freezer burn!”
Ah, but this cake is only a few months old. Whenever we’re in Connecticut, we stock up on cakes from the bakery that make our wedding cake: Take the Cake in Guilford, CT. It’s good stuff, people. Try a slice if you’re in the area.

haha, I was going to SAY, wow, five years old?? We would have raided that fridge years ago. Did you know …true story, NIck’s mom JUST threw out their wedding cake 3 years ago?? Yeah, they had been married about 40 years. Weird, yet….cute??
The photos are gorgeous, and congrats to both of you for a wonderful marriage and many more great years to come! BTW, I made teff pudding the other day. HOLY HECK, DELICIOUS!!!!!
Wow, really?? I can’t imagine moving a 35+ year old cake around – still, that’s pretty cute 🙂

Oh Happy Anniversary! This was such a fun post to read. I love seeing wedding pictures. You two make such a striking couple (then and now!) And your cornish hens look so very good! We’re having friends over for dinner on Thursday night and I just might have to make these! Thank you for sharing!!!
