monday munchies, part 5
After last week’s beautiful wedding, we didn’t get a chance to go grocery shopping right away. Therefore, last Monday’s eats were less-planned and more “hmm, will these foods go together?”.
Breakfast, 8 am:
Breakfast is a no-brainer because we usually have the ingredients for smoothies, oatmeal, and/or a yogurt-bowl-of-goodness lying around. Today was no exception. In the mix: honey Noosa, banana, frozen blueberries, Barbara’s squares, chia seeds. A cup of coffee with skim milk on the side (you finally get to see my Zabar’s mug!). Unpictured: Brazil nut, spoonful peanut butter.
Lunch, 12:30 pm:
Lunch was a little spotty because usually I eat leftover or a salad/sandwich, and we didn’t have the makings of either. We still had eggs and bread, so I made an egg in a basket.
I think my favorite part is the crispy circles of bread.
Drizzled with VT maple syrup, a pinch of Maldon salt, and enjoyed with milk, carrots, and an apple (nice job with the photography, Jessie!).
If you thought photography-related absentmindedness was confined to lunch, wait ’til you see dinner.
Dinner, 6:30:
I worked straight through the afternoon without a snack, which is very unusual for me. I guess I was really into it! I did stop by the grocery store mid-afternoon and pick up essentials like milk, bananas, and … olives. This is the day I made the “I Love Anchovies” Pasta Puttanesca that was such a hit.
Peter made his butternut squash soup with bacon. I took a few blurry pictures of the ingredients and neglected to photograph the completed dish. I’ll just say: it was delicious.

Q: What do you make when your fridge and cupboards are bare?
I hate coming home to an empty fridge! I always tend to have eggs around so often I’ll make something with them…or good old PB+J!
That pasta sounds amazing! And I love the name 🙂 I’m new to anchovies…huge fan!
